Boning knives
Our range of boning knives offers different options for different uses: we work alongside companies with different needs, such as delicatessens, restaurants, grocery shops, and for this reason we want to provide every possible solution when it comes to boning knives and other categories.
Specifically, in addition to the ultra-grip handle option for greater safety in use, our boning knives are available in different length versions, from a minimum of 10 cm to a maximum of 18 cm, with Rigid, Scalloped, Semi-rigid, Flexible, Scalloped Rigid, Scalloped Semi-rigid and Scalloped Flexible blade types. All you must do is choose the models that are right for you.
Slaughter knives
If you are looking for slaughter knives of absolute quality and efficiency, you just have to delve into the range provided by Tecnoganci. Equipped with a rigid blade, typical for this type of operation, our slaughter knives are available in the ultra-grip handle version. The blades, in lengths varying from 7 to 20 cm, are available in a double-edged version, with a straight and curved protected tip, as well as with a rounded tip, particularly suitable for peeling or eviscerating.
Cleaning knives
At Tecnoganci you will find a supply of cleaning knives suitable for any activity in the food industry: we work alongside ham factories, butchers, restaurant kitchens, etc.
The typical long cleaning blade, usually between 18 and 20 cm, is available in Curved Rigid, Scalloped Rigid and Rigid variants.
Paring and skinning knives
Tecnoganci’s staff, thanks to their decades of experience, provide customers with a balanced and optimal selection of knives for paring and skinning. Rigid and Scalloped Rigid blades from 15 to 21 cm make up a complete knife list, which can be further adorned with ultra-grip safety handles.
Trimming knives
The range of trimming knives available from Tecnoganci presents blade solutions from a minimum of 20 cm to a maximum of 30 cm in length, with Rigid, Scalloped and Scalloped Rigid types: for greater safety, we recommend the safety handles or the ultra-grip handle version.
Gastronomy knives
The category of gastronomy knives is one of the most varied and rich in alternatives, as they are used for cutting many different dishes.
The rigid blade, for example, is best suited for handling vegetables, soft cheeses and pasta, while the flexible blade is perfectly suited for cutting ham and salmon. We also have scalloped, serrated and micro serrated blades, which are useful for frozen foods, swordfish, etc. The range in stock includes knives ranging from 10 to 50 cm in length.
Slicing knives
Available in variants between 25 and 42 cm blade length, our slicing knives are equipped with the following blades:

Filleting knives

We have a range with blades varying in length between 16 and 20 cm, whose standard handle can be modified with the ultra-grip version, which is much more stable and safer.
Knives with safety handle
The knives with safety handles that we have for sale are the symbol of quality and stability: the handles in question are designed to guarantee an optimal grip.
Aesthetically, the handles are presented in the standard versions in yellow or red, but we can supply many other colors on request.
As far as technical features are concerned, however, the knives of this type include solutions for every possible process: rigid, semi-rigid, scalloped, flexible and other blades in the range are used for boning, slicing, skinning sheep and other meats, trimming, etc.
